I'll give myself an "A" for effort

Um. So ya...the Enchilada Casserole didn't come out how I wanted it too. It was way too runny! I pretty sure it was the canned enchilada sauce I used, I noticed it wasn't as thick as usual. Don't get me wrong it still was tasty but not very pretty. No picture or recipe card tonight, I still need to master this recipe. Until next time...

Enchilada Casserole?

I'm in the mood for enchiladas tonight! I'm way to lazy to add any sort of meat, but I think "cheese" tastes too bland. So... I have some corn, black beans & canned chile's in the pantry so I was thinking of making a enchilada casserole type dish! Sounds Good & pretty easy? Blog to follow...

Apricot Glazed Pork Loin

I've never really been a fan of Pork Loin & Pork Chops until recently. I've come to realize that Pork pairs great with fruit. I'll admit when I first found the "Apricot Glazed Pork Loin" recipe I was a little hesitant, but I thought..why not? It has a 5 star rating...so it must be pretty tasty! Last Thursday was my 2nd time ever making this dish. The pork came out GREAT! I served the pork with sauteed zucchini & garlic/chicken rice. The only "uh oh" moment was when the rice came out of the rice cooker. It was super mushy! Good, but mushy! Not really sure what went wrong there? Oh well, at least the rest of the meal with to diiiiie for! Happy Hubby once again!

I found my Camera!

I finally found my camera! woot woot! (Vince would have killed me if I lost it, I'm on my 5th camera in 2 years! yikes!) First dish I thought I would share with you is last Wednesday's dinner. We had Campbell's Cheesy Chicken & Rice bake! Easy & Super tasty! There is nothing I love more than a 3 in 1 meal. Chicken, rice, & veggies...how can you go wrong? Although after making this recipe 3 times, I made some minor changes to make this dish absolutely PERFECTO! Following the recipe exact you run into a few problems...the chicken is a little bland, the sauce is too runny and the rice can be a little too hard. I came up with some simple solutions. 1) Use 1 cup of rice, instead of 3/4. 3) Season the chicken with "Garlic Salt" before you bake. 3) Soak the rice in the water for 15 mins before dumping it into the dish to pre-soften it. Then...WaaaLaaa...the dish comes out amazing!! I served this dish with some hot Hawaiian rolls! Hubby was pleased once again!! ;) Enjoy!

PS: I used mixed veggies for the perfect combo!

in a BLAH mood!

Hiii All! I have been in a BLAH mood the last few days, my reason for no extravagant meal posts. Thank the lord for easy meals & the hubby BBQ'ing. I think the hubby is ready though for me to get back in the kitchen for some home cooked meals. I went grocery shopping on Monday night and as I mentioned in my last blog we were going to eat "fast food" that night. Due to the larger than expected food bill, I decided to whip up a quick meal when I got home. I came up with an idea for a easy deluxe grilled cheese sandwich w/ pesto mayo. I basically got..white bread, filled it w/ Tomatoes, Onions, American & Provolone Cheese and spread "Pesto Mayo" on the inside. I create the pesto mayo from those pesto packets and added the cooked pesto to mayo and created a even consistency. I then spread pesto mayo on the outside of each side and cooked the sandwich on medium heat in a frying pan until the sandwich became crispy and golden brown. I thought they came out AMAZING, Vince said they were "good" but one of his was a little soggy. I think that was due to putting on too much mayo and not cooking it long enough. All in all, I will probably make those again for an easy meal! Last night I was still in a super BLAH mood, so luckily we had hamburger buns to use up so the hubs threw some burgers on the BBQ. All I had to do was cut up the toppings & throw some fries into the oven. I can honestly say that nothing beats the smell of a cooking BBQ and not to mention the food always comes out delish!

I plan on making "Campbell's Cheesy Chicken & Rice Bake" for dinner Tonight. Blog to follow...

I need to go grocery shopping! Time to do my Meal Plan...

Our fridge is bare! I NEED to go grocery shopping! There isn't much available to make any any sort of gourmet meal tonight :( It's looking like a Fast food night!! (Not gonna lie, sometimes its nice not to cook, especially on a Monday). I'm doing my weekly meal plan as we speak. I definitely recommend everyone doing meal plans! That way you go to the store with a plan. You only buy what you need and prevent yourself from overspending. I promise I will make some awesome meals this week! Already have a few in mind...Cranberry Roast, Enchiladas, & Apricot Glazed Pork Loin! Can't wait!
