I'll give myself an "A" for effort

Um. So ya...the Enchilada Casserole didn't come out how I wanted it too. It was way too runny! I pretty sure it was the canned enchilada sauce I used, I noticed it wasn't as thick as usual. Don't get me wrong it still was tasty but not very pretty. No picture or recipe card tonight, I still need to master this recipe. Until next time...

Enchilada Casserole?

I'm in the mood for enchiladas tonight! I'm way to lazy to add any sort of meat, but I think "cheese" tastes too bland. So... I have some corn, black beans & canned chile's in the pantry so I was thinking of making a enchilada casserole type dish! Sounds Good & pretty easy? Blog to follow...

Apricot Glazed Pork Loin

I've never really been a fan of Pork Loin & Pork Chops until recently. I've come to realize that Pork pairs great with fruit. I'll admit when I first found the "Apricot Glazed Pork Loin" recipe I was a little hesitant, but I thought..why not? It has a 5 star rating...so it must be pretty tasty! Last Thursday was my 2nd time ever making this dish. The pork came out GREAT! I served the pork with sauteed zucchini & garlic/chicken rice. The only "uh oh" moment was when the rice came out of the rice cooker. It was super mushy! Good, but mushy! Not really sure what went wrong there? Oh well, at least the rest of the meal with to diiiiie for! Happy Hubby once again!

I found my Camera!

I finally found my camera! woot woot! (Vince would have killed me if I lost it, I'm on my 5th camera in 2 years! yikes!) First dish I thought I would share with you is last Wednesday's dinner. We had Campbell's Cheesy Chicken & Rice bake! Easy & Super tasty! There is nothing I love more than a 3 in 1 meal. Chicken, rice, & veggies...how can you go wrong? Although after making this recipe 3 times, I made some minor changes to make this dish absolutely PERFECTO! Following the recipe exact you run into a few problems...the chicken is a little bland, the sauce is too runny and the rice can be a little too hard. I came up with some simple solutions. 1) Use 1 cup of rice, instead of 3/4. 3) Season the chicken with "Garlic Salt" before you bake. 3) Soak the rice in the water for 15 mins before dumping it into the dish to pre-soften it. Then...WaaaLaaa...the dish comes out amazing!! I served this dish with some hot Hawaiian rolls! Hubby was pleased once again!! ;) Enjoy!

PS: I used mixed veggies for the perfect combo!
